And, I've been wanting to try to make eggplant parmesan for sometime because it always looks so appealing...I was wrong. Many people love eggplant, but I simply did not like the taste of eggplant, nor did I like the texture. So we took a couple bites, threw it out and ate ham biscuits instead!&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;But, in case you do like eggplant, here is my recipe.&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;img id="BLOGGER_PHOTO_ID_5298751763198312098" style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 320px; CURSOR: hand; HEIGHT: 240px; TEXT-ALIGN: center" alt="" src="http://2.bp.blogspot.com/_UYbCGnMluxA/SYjyp5Zo_qI/AAAAAAAAAF4/6pg28-0y_zw/s320/DSCN3662.JPG" border="0" /&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;Adapted from the "all new ultimate Southern Living" cookbook&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;Ingredients:&lt;/div&gt;&lt;br /&gt;&lt;div&gt;3 large eggs&lt;/div&gt;&lt;br /&gt;&lt;div&gt;3 tablespoons water&lt;/div&gt;&lt;br /&gt;&lt;div&gt;1 1/2 cups italian-seasoned bread crumbs or panko (I used panko and added some Italian seasoning)&lt;/div&gt;&lt;br /&gt;&lt;div&gt;2 large eggplants, cut into 18 slices&lt;/div&gt;&lt;br /&gt;&lt;div&gt;3 tablespoons olive oil&lt;/div&gt;&lt;br /&gt;&lt;div&gt;1/2 cup freshly grated Parm cheese, divided&lt;/div&gt;&lt;br /&gt;&lt;div&gt;1 package mozz cheese, shredded&lt;/div&gt;&lt;br /&gt;&lt;div&gt;3 cups pasta sauce&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;strong&gt;&lt;em&gt;Whisk&lt;/em&gt;&lt;/strong&gt; eggs and add water until blended. &lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;strong&gt;&lt;em&gt;Combine&lt;/em&gt;&lt;/strong&gt; breadcrumbs and 1/4 cup parm cheese. &lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;strong&gt;&lt;em&gt;Dip&lt;/em&gt;&lt;/strong&gt; eggplant slices in breadcrumb mixture; dredge in breadcrumb mixture. Cook eggplant, in 3 batches, in 1 tablespoon hot oil (per batch) in a large skillet over medium heat 4 min on each side or til tender.&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;strong&gt;&lt;em&gt;Arrange&lt;/em&gt;&lt;/strong&gt; one-third of eggplant in a single layer in a lightly greased 11x7 baking dish. Sprinkle with 2 tablespoons parm cheese and 1/2 cup mozz. Repeat layers twice. Spoon 3 cups pasta sauce over top.&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;em&gt;&lt;strong&gt;Bake&lt;/strong&gt;&lt;/em&gt;, covered, at 375 for 35 min. Uncover, sprinkle with remaining 1/2 cup of mozz cheese and remaining 2 tablespoons parm cheese. I can't believe I'm actually doing it, but I am, but I'm not promising anything for the remainder of the week! ;-)&lt;/div&gt;&lt;img id="BLOGGER_PHOTO_ID_5298591250118124146" style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 320px; CURSOR: hand; HEIGHT: 240px; TEXT-ALIGN: center" alt="" src="http://2.bp.blogspot.com/_UYbCGnMluxA/SYhgqzlIonI/AAAAAAAAAFI/TG55d13V0IA/s320/DSCN3661.JPG" border="0" /&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;Last night I made potato soup in the crockpot so here's my very own made up recipe.&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;1 can chicken stock&lt;/div&gt;&lt;br /&gt;&lt;div&gt;3 large Idaho potatoes&lt;/div&gt;&lt;br /&gt;&lt;div&gt;S&amp;amp;P&lt;/div&gt;&lt;br /&gt;&lt;div&gt;1 cup Milk&lt;/div&gt;&lt;br /&gt;&lt;div&gt;1 pint of half and half&lt;/div&gt;&lt;br /&gt;&lt;div&gt;1/2 cup water&lt;/div&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;Place potatoes, washed and cut into small squares into crockpot filled with can of chicken stock and water. Add Salt and Pepper to taste. Cover with lid and let cook on high for 3 hours or until potatoes are tender. Since I have a little more time on my hands, I have decided I'd like to try and plan out my menus ahead of time and do all the grocery shopping at once!  Who really knows how long this will last, but I'll give it a try at least this one week.&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:arial;"&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:arial;"&gt;&lt;span style="color:#cc0000;"&gt;&lt;strong&gt;&lt;em&gt;Mon&lt;/em&gt;&lt;/strong&gt;&lt;/span&gt;-OUT with friends&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:arial;"&gt;&lt;span style="color:#cc0000;"&gt;&lt;strong&gt;&lt;em&gt;Tues&lt;/em&gt;&lt;/strong&gt;&lt;/span&gt;-Crock pot potato soup, salad and bread&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:arial;"&gt;&lt;span style="color:#cc0000;"&gt;&lt;strong&gt;&lt;em&gt;Wed&lt;/em&gt;&lt;/strong&gt;&lt;/span&gt;-Eggplant Parmesan, rolls and salad &lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:arial;"&gt;&lt;span style="color:#cc0000;"&gt;&lt;em&gt;&lt;strong&gt;Thurs&lt;/strong&gt;&lt;/em&gt;&lt;/span&gt;-Oven fried honey chicken, roasted potatoes and vegetable stir fry&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:arial;"&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:arial;"&gt;I don't like to make menus for the weekend because we are so spontaneous on the weekends, I rarely cook unless it's for lunch, then I'll usually just use things I have on hand!&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:arial;"&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:arial;"&gt;Hopefully I'll get around to posting pictures and recipes from each of these days! It was really easy to make, but wasn't as good as I expected. The only change I made in the original recipe was that I used chicken tenderloins and punded them a little thin. Also, I only had lime, so I used that in place of the lemon and I used dried herbs and jarred garlic instead of fresh. I really think it woul dhave been better to add more salt to the bread crumbs. Still it was great for a quick weeknight meal!&lt;/div&gt;&lt;div&gt;&lt;a href="http://thepioneerwoman.com/cooking/2008/08/crispy-yogurt-chicken/"&gt;Click here for the recipe&lt;/a&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;I also made a corn pudding (shown in picture) that was similar to the one in PW's blog, but I did it a little different. I didn't really do exact measurements so here it is:&lt;/div&gt;&lt;div&gt;1 can shoe peg corn&lt;/div&gt;&lt;div&gt;some half and half&lt;/div&gt;&lt;div&gt;salt&lt;/div&gt;&lt;div&gt;pepper&lt;/div&gt;&lt;div&gt;cheese&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;I just mixed all of that until it was a good thick consistency. It called for chicken breasts halved, but I just used tenderloins instead. What can I say? In a shallow bowl, combine milk and garlic. In another shallow bowl or plate, combine the flour, salad dressing mix and pepper. I have to say it was one of the better cakes I've had in quite some time.&lt;/div&gt;&lt;br /&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;br /&gt;&lt;div&gt;&lt;strong&gt;The cake recipe&lt;/strong&gt; (from Wilton.com)&lt;/div&gt;&lt;br /&gt;&lt;br /&gt;&lt;div&gt;Ingredients:&lt;br /&gt;2 cups all-purpose flour unsifted&lt;br /&gt;1 teaspoon baking powder&lt;br /&gt;1 teaspoon baking soda&lt;br /&gt;1/2 teaspoon salt&lt;br /&gt;3/4 cup butter or margarine room temperature&lt;br /&gt;2 cups Sugar&lt;br /&gt;3 eggs&lt;br /&gt;&lt;a href="http://www.wilton.com/store/site/product.cfm?sku=604-2270"&gt;1 teaspoon Pure Vanilla Extract&lt;/a&gt;&lt;br /&gt;1 1/2 cups Milk&lt;br /&gt;3 ounces unsweetened chocolate melted&lt;br /&gt;&lt;/div&gt;&lt;br /&gt;&lt;br /&gt;&lt;div&gt;Makes: Serves 6 cups of batter.&lt;br /&gt;&lt;/div&gt;&lt;br /&gt;&lt;br /&gt;&lt;div&gt;instructions:&lt;br /&gt;Preheat oven to 350°F.&lt;br /&gt;Combine flour, baking powder, soda and salt.&lt;br /&gt;Cream butter and sugar together until light in texture.&lt;br /&gt;Add eggs and vanilla to creamed mixture. Beat thoroughly.&lt;br /&gt;Add flour mixture to creamed mixture alternately with milk, beating well after each addition.&lt;br /&gt;Add melted chocolate and beat thoroughly.&lt;br /&gt;Brush two 8 or 9 in. cake pans with Wilton Cake Release or generously grease pans with solid vegetable shortening and flour, or use Wilton Cake Release Pour batter into pans.&lt;br /&gt;Bake for 35-40 minutes or until top springs back when touched lightly in center.&lt;/div&gt;&lt;br /&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;br /&gt;&lt;div&gt;&lt;strong&gt;The Peanut Butter Icing&lt;/strong&gt; (from Kraft.com-had a cake recipe with it (chocolate cluster-Peanut butter cake), but I only used the icing)&lt;/div&gt;&lt;br /&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;br /&gt;&lt;div&gt;*I doubled the icing because I cut the layers in half to make 4 layers*&lt;/div&gt;&lt;br /&gt;&lt;br /&gt;&lt;div&gt;&lt;br /&gt;1 cup cold milk&lt;br /&gt;1 pkg. (4-serving size) JELL-O Vanilla Instant Pudding&lt;br /&gt;1/2 cup peanut butter &lt;/div&gt;&lt;br /&gt;&lt;br /&gt;&lt;div&gt;1-1/2 cups thawed COOL WHIP Whipped Topping &lt;/div&gt;&lt;br /&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;br /&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;br /&gt;&lt;div&gt;POUR milk into medium bowl. Add pudding mix. Beat 2 min. or until well blended. Add peanut butter; beat well. Refrigerate until ready to use. &lt;/div&gt;&lt;br /&gt;&lt;br /&gt;&lt;div&gt;PLACE one of the cake layers on cake platter; spread with 1 cup pudding mixture. Cover with remaining cake layer. Gently stir whipped topping into remaining pudding mixture. Instead of using jarred sauce I made my own, but you can do which ever you prefer.  I forgot to take a picture but we all know what lasagne looks like!&lt;br /&gt;&lt;br /&gt;8 oz. (1/2 package) Lasagne noodles, uncooked&lt;br /&gt;15 oz Ricotta Cheese or 2 cups cottage cheese&lt;br /&gt;2 cups mozzarella cheese, divided&lt;br /&gt;1/2 cup parm cheese&lt;br /&gt;2 eggs, lightly beaten&lt;br /&gt;6 1/2 cups of your favorite pasta sauce&lt;br /&gt;1 lb. ground beef&lt;br /&gt;1 tsp parsley&lt;br /&gt;&lt;br /&gt;~Preheat oven to 350&lt;br /&gt;~In med bowl, combine ricotta cheese, 1 cup mozz cheese, parm cheese and eggs, mix well&lt;br /&gt;~In seperate bowl, add browned meat to pasta sauce; mix well&lt;br /&gt;~Spread 1 cup of meast mixture in 9x13 pan&lt;br /&gt;~Place 1/3 of the noodles over sauce.  Spread with 1/2 of the cheese mixture&lt;br /&gt;~Repeat layering.  Top with remaining noodles and meat sauce.&lt;br /&gt;~Cover with foil.  Bake 55 minutes.  Uncover, sprinkle with reserved mozz cheese and parsley flakes.&lt;br /&gt;~Bake an additional 5 minutes or until cheese is bubbly. I've been putting it off forever and last night I had very little time to prepare dinner, so I said "I'm making &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_1"&gt;omelets&lt;/span&gt;.&lt;/div&gt;&lt;div&gt;I have to say, I was a little scared that they wouldn't turn out very good.  But, I proved to myself that I could do it. Then, I sprinkled some McCormick chicken seasoning on top.  I put sliced onions over the top and added a couple bay leaves.  I also added a little bit of apple juice into the bottom of the pot for just some moisture.  I cooked it all day on low.&lt;br /&gt;This chicken was delish! We decided to do a recipe exchange and the recipe you submitted had to be something that was from where you live. I made this soup thinking it didn't sound very delicious. But, boy was I wrong. It was so easy to make and very very good. It had a little spice kick to it, which I really enjoyed.&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;div&gt;I halved the recipe:&lt;br /&gt;&lt;/div&gt;&lt;div&gt;6 can green enchilada sauce&lt;/div&gt;&lt;div&gt;1 onion, chopped fine&lt;/div&gt;&lt;div&gt;Fresh Ground Pepper&lt;/div&gt;&lt;div&gt;6 cooked chicken breast, chopped or shredded (can sub 1-2 whole roasted chickens)&lt;/div&gt;&lt;div&gt;Your favorite tortilla chips&lt;/div&gt;&lt;div&gt;Grated Mexican Blend Cheese&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;br /&gt;&lt;br /&gt;&lt;div&gt;Combine enchilada sauce, onions, pepper, and chicken in a crockpot. Make glaze by mixing the three ingredients. Punch holes with a toothpick in the top of the cake. First, I had already left out the bacon and added the chicken of 2 bone in breast I had baked the previous night. Then, I added a can of chicken stock to thin it out and to spice it up a bit I added some red pepper flakes, 1/2 a pack of taco seasoning, a little more salt and pepper. I think thats about it. It turned out pretty good after all that. I used shredded potatos. After all, it is really good for you and I am really trying to loose a little more weight. The fish turned out really really good. I didn't go by a recipe. I just winged it and it turned out pretty yum. &lt;/div&gt;&lt;br /&gt;&lt;div&gt;First I put the orzo on to cook. The I covered my fish in some cajun seasoning. I cooked it in a pan with a little olive oil until it was done. When the orzo was cooked, I added a little minced garlic and some salt &amp;amp; pepper. They are really good, especially for the time it takes to fix them. They are extremely fast and easy to fix. I don't have a picture this time, but I'll be sure to take one next time.&lt;br /&gt;(source: kraftfoods.com)&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Prep Time:15 min&lt;br /&gt;Total Time:25 min&lt;br /&gt;Makes:4 servings&lt;br /&gt;3 cups water&lt;br /&gt;1/2 tsp. salt&lt;br /&gt;3/4 cup instant grits&lt;br /&gt;1 cup KRAFT Shredded Cheddar Cheese&lt;br /&gt;2 slices OSCAR MAYER Bacon, chopped&lt;br /&gt;1 lb. medium shrimp, peeled, deveined&lt;br /&gt;4 green onions, thinly sliced (about 1/3 cup)&lt;br /&gt;1 clove garlic, minced&lt;br /&gt;2 Tbsp. chopped parsley&lt;br /&gt;1 Tbsp. lemon juice&lt;br /&gt;BRING water to boil in medium saucepan. Add salt. Slowly stir in grits. Reduce heat to medium-low; cover. Cook 7 min. or until thickened. Stir in cheese; set aside.&lt;br /&gt;MEANWHILE, cook bacon in large skillet on medium-heat heat until crisp. Drain on paper towels; set aside. Add shrimp, onions and garlic to skillet; cook and stir 3 min. or until shrimp turn pink. Preheat oven to 375 degrees.&lt;br /&gt;2. Microwave butter for 30 seconds, stir and set aside. Do not worry if it is not completely melted.&lt;br /&gt;3. Combine flour, baking soda, and salt in a small bowl and set aside.&lt;br /&gt;4. Beat butter, granulated sugar, brown sugar and vanilla on medium-high speed until creamy. Add eggs, one at a time, beating well after each addition. Add milk and beat until combined. Gradually beat in flour mixture, beating just until combined (do NOT overmix!). Stir in chocolate chips.&lt;br /&gt;5. Refrigerate dough for 15-30 minutes.&lt;br /&gt;6. Drop by rounded spoonful (I used a Pampered Chef cookie scoop that holds approximately 2 tablespoons) onto ungreased cookie sheets. Bake for 12 minutes or until edges are just brown and middle is not quite set yet. Cool on pan for 2 minutes and then transfer to a cooling rack.7. Before adding more dough to warm cookie sheets, place sheet in freezer for 5-7 minutes to cool.Store in an airtight container.
